Cookery – Cake Art Skills

(commences 22nd January, 2019)
Sinead Nolan - TUESDAY 7.30 – 9.45pm (10 weeks)
This is a contemporary take on using free-hand art skills for cakes using a variety of mediums including modelling paste, wafer paper and fondant. Some skills we will learn are air-brushing, sharp edge cakes, modelling a face and figure, wafer paper models, painting with dusts, sponge painting, monograms for cake toppers and plenty more! We will also explore the use of the most popular stencils, molds, cutters and the best use for them.

This class is open to beginners and improvers alike. Students may follow step by step instructions from the instructor and receive individual support or motor ahead at their own pace with their project. It is a practical hands-on class, each week the student will make their own creation to bring away with them. All supplies and equipment are supplied in the class, a set fee (approximately €45) can be paid directly to the tutor to cover this in the first class. Some weeks we work on cake dummies, students are also welcome to bring in their own ‘real’ cakes to work on them instead.

Sample course content which may alter to suit students’ interests:

Week 1 Giraffe – a very proud giraffe wearing red lipstick!
Week 2 Panda wedding/ladybird wedding
Week 3 Monster Halloween
Week 4 Wafer paper – cutting and shaping into animals and birds
Week 5 Model persons head and shoulders, no molds or stencils used
Week 6 Continuation of head, face details
Week 7 Cover and sharp-edge cake, use gel paints to fondant cut-outs
Week 8 Painting – use variety of paint brushes to create different stokes/effects
Week 9 Modelling - Santa
Week 10 Using colour dusts onto cake, ivy and berries abstract style (without use of brushes)

The tutor, Sinead Nolan, qualified as a Chef from DIT Cathal Brugha Street. After a few years working in restaurants and hotels in Ireland, Germany and Scotland, she moved to London and worked and qualified as both a Pastry Chef and Cake Decorator, before gaining a place as Artistic Cake Creator in Sydney, Australia. Back home she has been involved with catering workshops, group and individual classes, demonstrations and supplying sugar models to shops.
